The Role:

As the Executive Chef at Perse, you will lead all back-of-house operations, reporting directly to Ownership. You will set the culinary vision, oversee menu development, ensure flawless execution, and cultivate a Michelin-level kitchen culture that reflects Perse’s Iranian-inspired identity. This role requires not only technical mastery but also leadership, cost control, and the ability to build and mentor a high-performing team.

What You’ll Do:

  • Develop and execute menus with Ownership’s approval, aligning with Perse’s brand.
  • Oversee food quality, plating standards, and consistency.
  • Lead BOH operations, including sanitation, allergen safety, and HACCP compliance.
  • Manage vendor relations, ordering, inventory, and cost control.
  • Create staff schedules and oversee labor allocation.
  • Hire, train, and mentor Sous Chefs, Line Cooks, Pastry, and Prep staff.
  • Conduct pre-service briefings; maintain strong FOH-BOH communication.
  • Represent Perse in inspections, media events, and culinary showcases.

What You’ll Bring

  • Culinary Leadership: Proven ability to inspire and lead diverse kitchen teams.
  • Technical Mastery: Advanced cooking, plating artistry, and recipe execution.
  • Operational Expertise: Vendor negotiation, scheduling, cost control.
  • Communication: Clear and respectful; bilingual (English/Spanish) preferred.
  • Professionalism & Adaptability: Calm under pressure, consistent judgment, and innovative within fine dining standards.

Certifications & Requirements

  • 8–10 years’ experience in professional kitchens with leadership responsibilities.
  • Experience in new restaurant openings strongly preferred.
  • Michelin-level or fine dining background required.
  • Culinary school degree or equivalent advanced training preferred.
  • ServSafe Manager certification (required).
  • HACCP knowledge (preferred).
  • California Food Handler Card within 30 days of hire.

Schedule & Work Environment

  • Full-time role; evenings, weekends, and holidays expected.
  • Fast-paced, high-pressure fine dining environment requiring precision and teamwork.
  • Requires standing/moving up to 10 hours, lifting up to 40 lbs., and frequent bending, stooping, and reaching.

Pay & Benefits

  • Annual salary: $110,000 – $120,000, commensurate with experience.
